WWEW: Link Party and Top 3 Summer Treats I'd love to try...

Hi guys! This is going to be a quick post, due to the fact that it's 10:00pm, both kids are asleep and I should be asleep too. I also have an announcement to make, sadly, this will be our last WWEW Link Party. We have decided it would be best to step away from the party at this time. We have had so much fun having you all link up with us each week, and we have enjoyed swapping recipes with you all! However, Kenzie and I have found it hard to keep up, especially with our new little ones. We want to say thank you for joining us each week, and we hope you'll stop by again from time to time. We will continue to post recipes, it just may not be every Wednesday at 8:00AM :) Now onto sharing some delicious food and treats!

Can you say refreshing? It has been so hot here lately, I love that these are both healthy AND refreshing!
3. Cocktail Snow Cones by Honestly Yum

I used to always get snow cones from the ice cream truck as a kid, this is a great "adult" version! :)

WWEW: Link Party & French Dip Recipe

Welcome to What We Eat Wednesday's! If you're new to the party, or to our blog, thanks for stopping by and welcome! We're happy you're here and can't wait to see what recipe you link up this week. Today I am sharing an easy French Dip reicpe! I love french dips, I almost always get them when I go to Arby's. However, now I can make my own right here at home, and you can to! 

Ingredients:
-1 can beef broth
-1lb roast beef
-4 long rolls
-Mayonnaise
-Italian seasoning
-8+ slices provolone cheese
Directions:
  1. Add the beef broth to a large skillet over high heat. When the broth starts to steam, reduce heat to medium and add the roast beef and cover. Let warm for about five minutes, until the roast beef is no longer pink.
  2. Meanwhile, preheat the oven broiler. Slice rolls in half and place them on a baking sheet cut side up. Spread a thin layer of mayonnaise on the top side of the buns and sprinkle with Italian seasoning.
  3. When the roast beef is warm, remove it from the broth using a slotted spoon or tongs and divide between the rolls. Lay two slices of cheese over the roast beef on each roll.
  4. Broil for 2-3 minutes, until bread is toasted and cheese is melted. Serve with extra broth for dipping.

WWEW: Link Party & Monterey Chicken Recipe

Welcome back! It's time for our weekly link party! But, before we get to that, I'm going to share a super yummy recipe I found for Monterey Chicken. Again, I didn't come up with this recipe. It was a Pinterest find. I've been really lucky lately with the recipes I've been finding! To be honest, I've been using Pinterest solely to plan my weekly meal plans... and I've just happened to hit a few gems. This is one of them!
If you would like to give this recipe a go, here is the link to the recipe from This Silly Girl's Life. The only thing that I did differently was I cooked my meat in my cast iron skillet, then placed it under the broiler to melt the cheese. I didn't want to set up our charcoal grill for just a few pieces of chicken! They turned out delicious, and I'm sure would be even tastier from the grill.

For the feature this week, I decided to choose the S'more Dipped Strawberries from Little Dove Creations! Oh my, these look amazing.Thank you so much for submitting the recipe... now I have a sweet tooth!

WWEW: Link Party & Easy Fried Rice Recipe

Welcome to our weekly Link Party, here at Orchard Girls and Laugh Eat Learn. We're glad you're here, and excited to see what you share with us this week. First I am sharing this easy fried rice recipe with you all, keep scrolling down to add your recipe to the party!
Ingredients:
-2 cups cooked rice
-2 tablespoons sesame oil (or vegetable oil)
-1 cup frozen peas and carrots (thawed)
-1 small onion, chopped (or onion powder)
-2 tsp minced garlic
-2 eggs, slightly beaten
-3-4 tablespoons soy sauce
-bacon bits (as desired)
Directions:
On medium/high heat, heat the oil in a large skillet or wok. Add the peas/carrots mix, onion and garlic. Stir fry until tender. Lower the heat to medium/low and push the mixture off to one side, then pour your eggs on the skillet and stir fry until scrambled. Now add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated. Add bacon bits. That's it!

WWEW: Link Party & Kentucky Hot Brown Sliders!

Time for another link party & delicious recipe! I didn't get too creative this week for my recipe, I just followed a recipe I found on pinterest that looked especially tasty! Let's just say... this recipe is one for the books, people! And I even left out (accidentally) one of the main ingredients!
I followed a recipe from The Seasoned Mom for Kentucky Hot Brown Sliders. For ingredients and such, go check it out on her blog. Basically, it's an ooey gooey cheesy mini turkey/bacon sandwich with pimentos (I actually used a mix of pimentos and green olives). So, so delicious and would be perfect for a party or get together. I paired it with some pan fried yams, mainly because that's what we had!

For this week's feature recipe, I chose Canning Rhubarb from Little House Living! I have a whole bunch of cherries I want to can, so I've got canning on the mind. I'd love to have some canned rhubarb for desserts and such during the winter! Thanks for submitting this helpful post!

WWEW: Link Party & Easy Chicken Cordon Bleu

Chicken Cordon Bleu is so delicious - even though the name sounds fancy,
it is actually pretty easy to make - here is what I did.
What you'll need:
-4 Chicken Breasts
-1 can chicken broth
-1 stick of butter
-garlic salt
-breadcrumbs
-sliced cheese 
-ham slices (thin)
*extras* - bacon bits, veggies, shredded cheese
-toothpicks
Directions: (preheat oven to 375)
1. Melt butter and mix with chicken broth and add garlic salt/powder (to taste) - set aside
2. Cut chicken breasts in half (like thinning the breast)
3. Place a slice of ham and slice of cheese on top of chicken breast
4. Roll chicken up and use toothpicks to secure
5. Dip the rolled chicken into the chicken broth mixture then cover with breadcrumbs / covering completely.
6. Place chicken in sprayed cooking pan / dump extra butter/broth mix into the pan. Sprinkle chicken with bacon bits and shredded cheese, add veggies if desired.
7. Cook for 45 minutes at 375 degrees or until chicken is completed cooked.

WWEW: Link Party & No-Bake Last Minute Cheesecake

Happy Wednesday, everyone! We're back for another awesome Linky Party. Also, I have a super easy and tasty cheesecake recipe to share. Hint: it only has 4-5 ingredients! Also, it's last minute because it only needs to chill for 30-60 minutes. Perfect for last minute dinner guests.
Ingredients:
-1-2 packages softened cream cheese, I used 1 but wished I would have used 2. It would definitely make things a bit more solid!
-1 14oz can of sweetened condensed milk
-1/4 cup lemon juice
-1 graham cracker crust
-optional-some sort of fruit topping, I used a can of blueberry pie filling
Directions:
1. Mix cream cheese, milk, & lemon juice until smooth. Pour into graham cracker crust.
2. Stick it in the fridge for 30-60 minutes, then enjoy!

Onto who I decided to feature for this week! I chose these delicious looking Oatmeal Chocolate Chip Cookie Bars from Homemade Shenanigans! I've been craving anything sweet lately, and will probably whip these up next time I get a sweet tooth.

Sorry for the late start this morning everyone! Today I have a super easy and extra delicious recipe to share with you all! This is a recipe for the best homemade ice cream I've had! Daniel (my husband) actually discovered it and made me a batch for Mother's Day. Can't beat that - he obviously knows the way to my heart. Lol!

WWEW: Link Party & Chicken Avocado Burritos

Good morning & happy Wednesday! It's time for our weekly recipe link up, and to share another delicious recipe. Today, I'm going to share a super simple recipe for Chicken Avocado Burritos!
Ingredients:
1 large chicken breast, boiled and shredded
taco seasoning (I used 2 Tbs of my homemade taco seasoning)
2 medium avocados, semi-mashed
approximately 1/2 cup shredded cheese, add more or less if wanted
approximately 7 large tortillas
1 Tbs oil

Directions:
1. Boil and shred the chicken. Place shredded chicken in a skillet & season with taco seasoning. Either follow the directions on the seasoning packet, or add a little bit of water to the pan with your own seasonings like I did. Let simmer until water is gone.
2. Heat a large skillet to medium with the Tbs of oil.
3. Arrange the burritos with chicken, cheese, and mashed avocado. Place seam side down into the hot skillet. Rotate often to brown all of the sides. 
4. Eat up! You could serve with salsa & sour cream, if wanted.

Now onto the link party! For this week's feature, I chose Crafty Lumberjack's The Secret's in the Sauce Lit'l Smokies! I've made several variations of these in the past, but have never tried it with chili sauce. I may have to try this out! I usually love these no matter what.

WWEW: Link Party & Easy Twice Baked Potatoes

Welcome to What We Eat Wednesday - Our weekly Link Party here on Orchard Girls! Where you can link up and share your new or old recipes. But FIRST here is the recipe I'll be sharing with you today-Super easy Twice Baked Potatoes!
Ingredients:
-Two Potatoes 
-Sour Cream
-Bacon Bits
-Diced Ham (optional)
-Cheese
-Cheddar Crunchy onions
-Salt & Pepper
Directions:
Here comes the easy part - bake your potatoes in the microwave for 10 minutes. Slice the potatoes in half and empty the potatoes out of the skins (place skins on a baking sheet). Put the potatoes and all the ingredients into a mixing bowl and stir together well. Now I know I don't have specific amounts of the ingredients, but really baked potatoes are all based on preference so just add them as desired. Put the mashed potato mixture back into the potato skins. Top with cheese and crunchy onions and bake in a preheated oven (350) for about 30 minutes or until cheese is melted. That's it!

WWEW: Link Party & Refreshing Cucumber Salad

Welcome back to What We Eat Wednesday! As the warmer months start approaching, I start looking for nice refreshing recipes that don't require much work or an oven/stove top. I decided to give this Cucumber Salad a go, and I think we have a winner. I looked over several recipes, and sort of adapted it to fit our liking. While looking up recipes, I found out that this is actually a fairly common Polish recipe called Mizeria. I definitely knew I needed to make it after reading that, since I'm part polish and love finding things having to do with the culture.

Ingredients:
-1 large cucumber
-salt
-1 Tbs sour cream
-1/2 tsp dill
-juice from 1/2 of a lemon (many recipes call for vinegar instead)
-2 pinches of sugar
-pepper to taste

Directions:
1. Peel your cucumber and slice thinly. Place in colander. Sprinkle with salt (I just eyeballed it). Let sit for about a half hour for some liquid to drain.
2. While cucumber slices are draining a bit, mix all other ingredients into a small bowl. Cover and put in the fridge.
3. Place cucumber slices on paper towels and pat/press dry. Don't rinse off the salt.
4. Add cucumbers to sauce, mix. Either let sit in the fridge for a while or serve. We let ours sit, and it was delicious.

WWEW: Link Party & Homemade Crunchwraps

Welcome to What We Eat Wednesday, our weekly Link Party, here at Orchard Girls. We're so glad you're here! Today I am sharing a fun and easy recipe for Homemade Crunchwraps. You know, those yummy soft, but crunchy, meat and cheese filled delicious meals from Taco Bell. Well, this is that, but SO much bettter! :)

*First cook your meat (beef, chicken or whatever)* 
*You can use this taco seasoning  recipe from Kenzie, HERE!*
Step 1 - Warm tortilla in the microwave for 10 seconds. and put meat in center of tortilla-size of circle hard shell.
Step 2 - spread on cheese (cheese dip)
Step 3 - Put on crunchy shell
Step 4 - spread on cream cheese
Step 5 - sprinkle on shredded lettuce and diced tomatoes or salsa
Step 6 - If your tortilla isn't big enough rip a small piece of an unused tortilla and place in center (so there are no holes.
Step 7 - Fold over tortilla in a circle, folding over the next piece - Spray a cooking pan and heat to med/high, place folded side down in pan and cook for a couple of minutes pressing down slightly with spatula. Flip and repeat.
Step 8 - Top with any other toppings, and ENJOY! :)
