The BEST Keto Cinnamon Sugar Donut Holes

Okay, these were so good that I had to make a blog post to share them! Seeing as I haven't posted in forever, you know it has got to be good! These delicious cinnamon sugar donut holes are my current favorite keto treat. The taste is spot on and the texture is perfect (which is sometimes hard to find when it comes to anything low carb).

Let's get right into it!
Here is what you'll need:

Ingredients:
2 Tbs ground flaxseed
4 Tbs water
2 1/2 C Almond Flour
a pinch of salt
4 tsp cinnamon
1/2 C monkfruit sweetner
2 Tbs coconut oil
1 tsp vanilla
1/4 C cinnamon protein powder/or other keto friendly protein powder
1 tsp xanthum gum powder
1 tsp banking powder
1 tsp baking soda
1 egg

coating
1 Tbs monk fruit sweetner
1/2 tsp cinnamon

Directions: (preheat oven to 350 degrees)
  • In a bowl, mix flax with water and set aside for a few minutes to thicken.
  • Combine almond flour, salt and cinnamon in a mixing bowl. Add cinnamon protein powder, xanthum gum, baking powder and baking soda - mix well.
  • Add monk fruit, oil and vanilla to the flax mixture and whisk together. Pour wet over dry and mix well.
  • Add egg and beat with a hand mixer
  • In a small bowl, stir together 1 Tbs monk fruit and 1/2 tsp cinnamon. Set aside.
  • Use a cookie scoop or your hand to make "holes" out of the dough. Roll each one smooth in your hands.
  • Roll each "hole" in the cinnamon "sugar" mixture to coat.
  • Put rolled donut holes onto parchment paper or silicone baking mat and put into the oven for 10-12 Minutes ( flip over half way through. )
  • ENJOY!

Comment below if you end up making them and let me know what you think!

Keto Low Carb Chocolate Peanut Butter Cups

Chocolate Peanut Butter Cups by Orchard Girls Blog
Guys, these are SO GOOD! These really have a great taste and remind me so much of the original Reese's peanut butter cups. When you first start the KETO diet I think its best to stay away from treats, keto or not, all together. Once I got adapted to Keto eating I slowly started introducing baked "keto treats". And let me tell you...there are so many delicious recipes out there that you can make/adapt and find what works for you. Recipe for these delicious Chocolate Peanut butter cups down below..
Chocolate Peanut Butter Cups by Orchard Girls Blog
For these chocolate peanut butter cups I used a silicone mini cupcake mold for these, and I feel like they were the perfect size!

These would be a great keto treat to bring to a Christmas party to share (or not share, haha) That way you're not tempted so much by all of the non-keto treats laying around. I've found this works for most occasions and keeps me from snacking on the cheat treats!

Recipe adapteed from wholseomeyumblog
(who has many more amazing recipes, so be sure to check her out!)

Ingredients:
Chocolate Layers:
  • 10 oz Sugar-free dark chocolate(divided; ) I used dark chocolate Lily's Chocolate Chips
  • 5 tbsp Coconut oil (divided)
  • 1/2 tsp Vanilla extract

Peanut Butter Layer:
  • 3 1/2 tbsp Peanut butter (creamy) I used Reese's Creamy peanut butter (surprisingly low carb)
  • 2 tsp Coconut oil
  • 4 tsp Powdered monk fruit sweetner (to taste)
  • 1 1/2 tsp Almond Flour (or peanut flour if you have it!)
  • 1/8 tsp Vanilla extract
  • 1 pinch Sea salt (optional, to taste)

Directions:
  1. Line a muffin tin with parchment paper or use a silicone muffin/mini muffin tin
  2. For the bottom chocolate layer, heat half of the chocolate (5 oz) and half of the coconut oil (2 1/2 tbsp) in the microwave in 20 sec intervals until melted. Stir in half of the vanilla (1/4 tsp).
  3. Fill the bottom of the parchment cups evenly with chocolate (about 2 tsp  in each). Freeze for 10 minutes, until at least the top is firm.
  4. Meanwhile, for the peanut butter layer, heat the peanut butter and coconut oil in a microwave (same method as step 2). Stir in the powdered sweetener, almond flour or peanut flour, vanilla, and sea salt (if using), until smooth. Adjust sweetener and salt to taste if desired.
  5. Spoon a teaspoon of the peanut butter mixture onto the center of each cup over the chocolate layer. It will spread a little into a circle, but not quite reach the edges, which is what you want. Freeze for another 10 minutes, until at least the top is firm.
  6. Meanwhile, make the top chocolate layer. Heat the remaining chocolate (5 oz) and remaining coconut oil (2 1/2 tbsp) in a microwave (same method as step 2). Stir in the remaining vanilla (1/4 tsp)
  7. Pour the chocolate into the cups, over the peanut butter layer (about 2 tsp in each). The chocolate will fill the empty space on the sides of the peanut butter circles and also cover the top.
  8. Return to the freezer for at least 20-30 minutes, until completely firm. Store in the refrigerator.

Family Christmas Pictures 2014: Kayla

Good Morning! Can you believe there are only 3 days until Christmas? I love this time of the year! It is so beautiful outside as the seasons change, and it is great time to get the family together and take that yearly family Christmas picture. Perhaps you're waiting til the last minute, but I'm guessing most of you have sent your your family Christmas picture/greeting cards (if that's something you do). We took our pictures the weekend before Thanksgiving. We rarely get the chance to take pictures of the whole family all together, so I was excited we got a few good pictures. It is crazy how challenging it can be to get a decent picture of everyone. Kenzie had her work cut out for her, to try and get everyone's attention, and us all smiling at the same time. It is a big different to go from one kid to two, in terms of taking pictures. Haha. Anyway, I was happy with how they turned out, and I thought it would be fun to share them with you all! I always enjoy looking up picture ideas for family pictures on pinterest. Here you go!

Christmas Decorating + Kid's Festive Breakfast Shenanigans

We were busy getting into the Christmas spirit at our house this past weekend. Daniel went out and picked out our tree, then Addie and I decorated it. She didn't quite grasp the whole hanging ornaments on the branches, and more so just plopped them on the tree, but it was cute to see her try. I also hung our stockings and set out a few more decorations.
We don't have an actual fireplace, so I hung them on our DIY Apple crate bookshelf!
My little Christmas decorating helper wearing her
"Bedhead, graphic tee, sippy cup, LET'S DO THIS!" Tee from Shop Jumping Jack
We decided to make some Christmas breakfast, too! Here is what we came up with...
Fun Kid's Christmas Breakfast Ideas - Reindeer Pancakes
We had fun making rudolf/reindeer pancakes the other morning! They are super easy to make and festive, too! I just used frozen mini pancakes, cooked bacon, decorative candy eyeballs, and cut up a strawberry for Rudolph's nose! They turned out pretty cute.
Fun Kid's Christmas Breakfast Ideas - Snowman Pancakes
We made a little pancake snowman, too. For him we used frozen pancakes, bacon for arms, decorative candy eyeballs, whipped cream for snow and a scarf, a strawberry for a hat, and chocolate chips for buttons!
I have seen so many other creative breakfast ideas on pinterest, I just never remember to try them out. Not to mention, its usually early, and im not much of a morning person! Haha. Thanks for stopping by! Do you and your family have any particular Christmas decorating traditions? I'd love to hear about them, comment below :)

Christmas Outfit Inspiration

Hey everyone! I don't know about you, but I usually plan my outfits for Christmas events. Whether it is the day itself, or company Christmas party... I hope you find some inspiration from the 3 outfits I came up with. And as a plus, you can find all of the items at Target.

1. A Casual Christmas (most likely what I'd wear to a casual event)
Here are the links: blouse, sweater, jeans, boots, bracelet 1, bracelet 2.

2. Comfy yet Festive Christmas (a little fancier, but still comfortable to wear)

3. Professional Christmas. (If you have a work party, or something a little nicer but not TOO fancy!)

I hope these idea helped someone! I don't think I have anything festive going on this season, except for Christmas day- so I'm probably going to be in something comfy. Maybe snow boots if we end up with a White Christmas like last year! :)

Have a great Thursday!

Fun Holiday DIY Videos

Hey everyone! How is your week going? Mine is going pretty well. We've been just trying to stay warm around here, and thankfully it's supposed to warm up a bit pretty soon.

I just have a quick post today. I thought I'd share some videos that I've really been enjoying this month. And they're from MissGlamorazzi on YouTube. She's been doing a DIY video almost everyday. They're great quality, and she has some really awesome ideas. I encourage you to watch a couple. I especially want to try the Chocolate Hazelnut Puppy Chow that she made up to be really cute gifts.
Anyway, that's all I've got for you. My fingers are freezing as we speak, and I need to get into my room where the space heater is. :)

And oh, I don't know if you guys like doing online personality tests, but I do. Here's a really cool one from ipersonic. Personality studies really interest me, and I love doing little tests like these and then reading other people's results! I got the Good-Natured Realist, and Kayla got the Harmony-Seeking Idealist. Share what you got in the comments below!

I hope you all are doing well!
