What We Eat Wednesday: Chicken Alfredo Pizza

Last night I decided to whip something up with random ingredients I could find in the fridge/pantry. We haven't been to the grocery store yet, and that always makes for some interesting dinners! I had defrosted some chicken breasts the day before and knew I needed to use those. I ended up deciding on a white sauce pizza.

I started pulling out ingredients that seemed like they would be tasty on this white sauce and chicken pizza. Here's what I came up with.
Ingredients:
- Pizza crust of your choosing (I used Archer Farms' (Target brand) Fire Roasted thin square pizza crusts, comes in a 2 pack)
-cooked and cut up/shredded chicken (about 1 breast, depending on the size of your crust)
-about half a cup of white sauce (I used a jar of Classico Creamy Alfredo)
-1 clove minced garlic, mixed into the sauce
-1 cup of shredded parmesan cheese (1/2 cup per crust)
-about 6 peperoncinis, sliced
- about 1 cup baby spinach
- small can of sliced olives (I used chopped olives since that's what I had)
- 1 Tbs italian seasoning

Directions:
1. Cook your chicken breast(s). I boiled mine for about 7-10 minutes, and then placed them on a cutting board and cut them in about inch size thin slices.
2. Spread your mixture of white sauce and minced garlic onto your pizza crust.
3. Place all of your toppings on, evenly distributing them across your pizza.
4. Sprinkle the italian seasoning on top.
5. Bake in your oven according to the directions on your pizza crust. Mine was about 8 minutes at 400 degrees.
6. Enjoy!
My husband wanted to enjoy a beer with his pizza but we didn't have any. So, while the pizza was cooling, we hopped on the 4-wheeler and buzzed on up to his parents' house to raid the fridge. Lo and behold, they didn't have any beer either. Bummer. When we got back home, we noticed that my plate had been emptied and half of one of our pizzas was missing. Kayla and Daniel's doggy, Lucy, had decided to sneak a few pieces off the table while we were gone! I hope she enjoyed it! And I hope you guys enjoy it, too!

Happy hump day!

DIY: Baby "Tag" Blanket

I recently made a no sew “tie” blanket for myself. It was fun to make, and I love it! So I thought, why not make one for Adeline, one just her size!? There are a lot of those “tag” blankets that have become pretty popular. So I figured I would try and replicate something like that. Here is a tutorial of what I did….
Supplies Needed:

-Spare Fabric (I used 18x30in. Minkee)
-Ribbon Spools
-Scissors
-Ruler

That's it!
I purchased two different minkee quilters quarters. (size 18 x 30 inches), You could also just use and same sized spare fabric. For the “tag” part of the blanket I used coordinating ribbon spools.
Step 1: Place the fabric together with the soft size facing outwards and place on the ground or table. (doesn’t matter which side is up)
Step 2: Cut out a square shape at each corner a couple inches in size(cutting through both pieces of fabric)
Step 3: For your ties, you will need to cut a couple of inch pieces straight up, one right after the other.
Step 4: Double knot the two pieces together, until all the pieces are ties along the long side.
Step 5: Next you will need to get your ribbon out and cut them into 10 inch pieces.
Step 6: Now you will want to plan/lay out the ribbon in the order you’d like them to look in the end. Now this next part is kind of confusing, so hopefully I can make some sense of myself. On the short sides of your fabric is where you will be putting your ribbon in. You are going to want to tie them the same as the knots on the long sides. Except after you do your first knot slip the ribbon piece through. Then tie your second knot (completing one double knot). Once you complete the double knot, tie the ribbon in a knot around it and pull tight.

FINISHED PRODUCT:
Hopefully that wasn’t too confusing. I really like how this blanket turned out, and Adeline just loves it. She enjoys looking at the different color ribbon and also pulling on them, well mostly chewing on them…but there isn’t much she’s not chewing on these days!
It’s also perfect for her size (5-6months), especially during summer. It’s not too big and bulky, but still cuddly and can cover her. I hope this is a fun project for you!

DIY: Memory Jars

Happy Monday! Today I'm going to share a quick project with you that both looks pretty and holds special memories. I've been collecting seashells for the last few years from some beaches we've been to, and decided that they all needed a home.
You're going to need a few things for this project, and probably the most important things you'll need (besides your keepsakes) are glass jars. I used recycled spaghetti sauce jars, candle jars, and even an old jar from a reed diffuser. I tend to save any jars that I think I may be able to use again! You will also need:
-some type of glue (I used Tacky Glue)
-some tags of your choosing, with string
-ribbon
-a permanent marker

Directions:
1. Clean out your jars and gather your collections. Put collections into appropriate jar.
2. Decorate the jar with ribbon, if you'd like. Let the glue dry while you make your tags.
3. Lay out your tags, and coordinate which tag goes to which jar. Get creative! Write the location where your collection came from on the tag.
4. Remove lid from jar, tuck your string in, and close lid on top of string.
5. Arrange your pretty jars, and enjoy your memories!

I think this would be a good idea for keeping little things from vacations or weekend getaways! You might notice in some of the top pictures, the jar on the far right is holding wine corks. We've collected them from places we've gone wine tasting. You can really fill your jars with anything!

Have fun making memories!
